Aside from Tolkien, I have yet to find a good fantasy book... Then again, I have not read that many fantasy books, but so far my sampling says 95% of all fantasy novels are complete and utter crap.

That's a pretty difficult question. It's kind of like saying, show me a good novel. There are many kinds of fantasy. What kind of fantasy are you looking for?
If you're looking for grand epics, I suggest Stephen R Donaldson's Chronicles of Thomas Covenant, pretty much anything by Michael Moorcock, Stephen Erikson's Malazan Books of the Fallen are pretty good. Also in that list I would have to add David Eddings' Belgariad (a good if slightly mindless read), Weiss and Hickman's Deathgate Cycle and, Brook's Shannara series.
If you're looking for good hack and slash, Conan is always fun, whether the original books or the later ones. Other good fun would be the Thieves World series, and a number of the game based books like Dragonlance or Forgotten Realms.
If you want humour, the Pratchett is your man all the way. He is the grand master of fantasy humour.
Hope this helps.

Oh yes, before I forget, stay away from any and all Dungeons and Dragons novel (the only half semi-decent one being the first of the Dark Elf trilogy, granted I did not bother reading the rest of it due to lack of interest)...

Another excellent author is Tad Williams and the Dragonbone Chair series. Very well done. Trifle wordy, but still a very rich text.
Other good fantasty authors:
Guy Gavriel Kay Philip Hartman

The Dragonlance books are great, and the Death Gate Cycle is incredible

Weiss and Hickman at their best. I really did like the Deathgate cycle. Maybe I'll get it again and reread it. hmm.

Geeze, you guys make me want to read the Death Gate Cycle again... too bad I sold all the books years ago. Darn parents and their tag sales. I've heard him slandered a lot, but I like the Wheel of Time series by Robert Jordan. (FYI, he also wrote the Conan books under a different pen name (I think)) The last few books have been long and drawn out and I think he's trying to milk the fans for as much as he can. I really wish he would end the series before he thouroughly ruins it, but the first group of books were good.

I forgot that Robert Jordan had written some of the spinoff Conan stories. They weren't bad. The original author is Robert E Howard, who has written a whole slew of other stuff too. Very much the father of Sword and Sorcery Fantasy.

Whoops, I haven't actually read any Conan books and didn't realize they were written by more than one author. Sorry 'bout that.

I'm currently re-reading Robert Jordan's "Wheel of Time" series. He started writing it in the early 90's. I read the first five books and got bored waiting for the next one to be published...I forgot about them. Then I found the next four books at a Half Price Books a couple months ago. I'm happily in the middle of the now 9 book long series.
May I also recommend Tad William's "Otherland" series. ...A little more sci-fi than fantasy but good. He also wrote a pretty good fantasy series, "The Dragonbone Chair", "The Stone of Farewell", and "To Green Angel Tower".
As Hussar said, David Eddings' "Belgariad" is light but good. And Terry Pratchett is a god.
