Pumes or Pomme Doree (Golden Apples of Meat)
A medieval recipe:
These golden apples are meant to deceive the feaster who bites into them expecting one taste and recieves another! ;D
INGREDIENTS:
1 C Dates, minced
1 C Raisin
1/2 Tsp Salt
1/8 Tsp pepper
1/2 tsp Cinnamon
1/4 tsp ginger
1/4 tsp clove powder
1/8 tsp saffron
1 Lb chopped veal
4 eggs
1 tsp oil for greasing baking sheet
BATTER
1 c flour
2 raw egg yolks
1/4 tsp ginger powder
1 pinch powdered saffron
1 tsp fresh parsley, finely chopped (or 1 tblsp for greener 'apples')
**OPTIONAL
green food coloring (for batter)
1) Mix the dates and raisins
2) Mix salt, pepper, cinnamon, ginger, cloves, and saffron; mix spices with dried fruits.
3) Throughly stir spiced fruits with veal.
4) Beat eggs, reserving about 1 tblsp of the beaten egg mixture for later use; add to meat mixture stirring until meat holds its shape.
5) Wetting fingers in the residual egg, form "meat balls" of "small apple size". These later will be covered with batter so that a size larger than a silver dollar is useful.
6) On lightly oiled baking sheet, bake meat balls for 20 minutes at 375. Cool.
7) Prepare a thick batter by uniting ingredients thoroughly. Reset oven to 400.
8) Coat each ball on all sides and return to oven for 7 minutes or until golden, not brown. The "apples" will appear either green or gold, depending upon the amount of pigment in your local parsley. If you wish "paint" stems and apple leaves, following your exuberant imagination.
(or do what I did, pick twigs and leaves from a living tree, wash thoroughly and stick them into the meatballs)
This was a big hit at a DnD game a few years back... The expression on the gamers faces as they bit into them expecting one taste and received yet another was priceless!!!
