The obvious choice for that combo would be duelist (you would get to toss in your int. bonus to ac also).

And, if you use 3.5E, the annoyingly powerful dervish.
[edit] just a single level, mind you. dervish gets a single point of AC at that point (and a couple of other spiffy skills). [/edit]
[edit #2]of course, if you play 3.5E, you get only 1 point of INT-based AC per level. get 7 levels of duelist, and "Fighting defensively" suddenly gets a whole new meaning.[/edit #2]

a buddy of mine was trying to build a dervish.
he took the unfettered from monte cook's arcana unearthed and threw in a few levels of barberian.
that guy is @#$@#$ frightning.

Swashbuckler (from CW)/Rogue who becomes a duelist, that way you can grab a couple of fighter feats that allow improved AC, or take the cloth dancing/whirling feats from the Sword & Sorcery books to pump the AC.
*sigh* another reason the monk is too heinous...
power play note: Invisible Blade PrC from CW, make sure to have at least 5 or 6 levels of Rogue before entering it and go all the way. 2 or 3 fighter levels wouldnt hurt either. Why? because you can feint as a "free action" and get the FULL sneak attack bonus to your damage with each feint attack. 12th level char with 2 to 4 attacks a round, all of them applying sneak damage? dead oponants very quickly...

Actually, there's are pretty simple answers to this:
1. Assuming that your PC's fighter levels came first before you took levels in monk, you can NEVER level up in Monk classes again if you level up in something else. Because the monk is so uber-powerful, the PHB specifically states that a monk PC may never take levels in another class. EVER. (OK, except for PrC in Sword and Fist or OA). SO, you actually cannot take any more levels in any more classes per the rules.
2. You gonna monitor your XP, right? If you keep taking a level here and a level there, you're guaranteed to run into major XP bonus snags.
3. If you keep taking one level here and another there, what exactly is the point of your character? First off, abilities are a waste; you'll become so bogged down in keepin the XP straight, you'll never actually get any fun ones. Secondly, from an RP perspective, this taking of multiple classes is senseless... why would anyone do that?
AA, don't blame the monk class dude, blame the munchkins and powergamers.

As far as the xp penalities goes, I thought that prestige classes do not entail any, which is why everyone always multis in prestige classes!(?).

Yes, PrC's do not entail xp penalties. And, so long as this character is human, he can ignore one class when determining xp penalties.

he can ignore the class with the highest level, not just any single class.

Prestige Classes do not count when factoring in multiclass penalties, neither does your favored class, which differs from race to race. Being human or half-elf, the favored class is whatever is the highest (again, not counting the PrC)
And there's a 100% sanctioned way around the ubermonk nope you cant multiclass this rule. Dragon magazine gives example, it requires trading off one or two abilities the monk normally gains, but gains instead the abilties of different classes, such as monks, rangers, and fighters and allows monks to multiclass with these classes freely.
Also, im not sure if this is the case, but many PrC's make note that some can take levels in their previous classes and advance in the PrC (meaning you can multi with the monk or paladin classes depending on the PrC you choose).
And yeah, i blame the mechanics/class as much as the players. With powegamers and munchies, they take the options and exploit them far too much, but in the systems themselves, the options that can be exploited exist. Besides, ive never been kosher with the idea of the monk in DnD anyways.
