Well I have a great, and easy Chicken Enchilada Casserole recipe
4-5 boneless, skinless chicken breasts cooked and diced
mix with
1 cup sour cream 1 can rotel tomatoes 1 can cream of chicken soup 1 cup grated cheese 1 packet McCormicks mild Chili mix
Mix all together and then, layer it like lasagne, except with corn tortillias instead of noodles. Top natually with even more shreadded cheese (can never have enough)
Bake at 350 for bout 30 to 45 mins

Hope you don't mind OW, but I've done a bit of improving upon your recipe.
LWW's Chicken Enchilada Casserole
2 whole chicken breasts, deboned, skinned, cooked and diced. 3 Tbsp chili powder 1 - 10 1/2 oz can cream of chicken soup 1 - 10 1/2 oz can refried beans 15 1/2 oz jar medium, chunky salsa 8 oz. sour cream 2 cups grated Mexican style cheese (1 1/2 cups + 1/2 cup set aside) cooking spray 1 package (10 in package) corn tortillas
Preheat oven to 350 F.
In large mixing bowl, mix well the first 7 ingredients (not the 1/2 cup of cheese set aside).
Spray a 2-quart baking dish, place 4 tortillas on bottom. Covering bottom and up the sides. Spread out 1/2 the mixture from the bowl. Cover with 3 tortillas, spread out other 1/2 of mixture. Cover with 3 tortillas, spread 1/2 cup of cheese over top of tortillas.
Bake for 45-60 minutes; until top is slightly brown, and mixture is bubbling. Set aside 15 minutes before serving.
Serves 4-6.

I LOVE OW chicken enchilada casserole!!! It's AWESOME!!! Not too sure about the chunky salsa or refried beans though...............guess it's something I would have to try!

Hey, can either of you find a recipe for chicken enchilada's with white sauce? I had those once eons ago, and cannot seem to find a recipe for one.............but they are oh so yummmmmyyyyy good!

You want to make sure you don't use anything with too much color in it, even tomatoes (the juice will leek out and stain the sause with red). Take out the salsa, refried beans and mexican style cheese. Don't worry about the chili powder, it will be completely incorporated into the other ingredients. Now, double up on the sour cream and cream of chicken soup. Add chopped chili peppers for heat and use white Monteray Jack cheese instead, and you'll have your "white chicken enchilada casserole".
