4 boneless chicken breasts 1/4 cup olive oil 1/4 cup butter 1 bunch green onions, finely chopped 2 cloves garlic, finely chopped 1 cup mushrooms, sliced 1 roma tomato, diced (removed seeds) 1/2 cup black olives, sliced 1 tbls dried parsley 1 1/2 cups white cooking wine 1 package fettuccini
Spray grill pan with olive oil spray. Pan sear chicken until golden brown on all sides. Add olive oil and butter, chopped green onions, minced garlic, and sliced mushrooms. Saute, then add diced tomato, black olives, and parsley. Pour white cooking wine into the mix to create sauce and let simmer slowly until chicken reaches desired doneness (15 - 20 minutes). Cook fettuccini, drain, and rinse. Serve chicken on the side and pour remaining sauce over pasta.
