CHICKEN TORTELLINI SALAD 4 Boneless Chicken Breasts 1 bag of Cheese Sevirali Tortellini 4 tbsp. olive oil, divided 1 cup sugar peas, stemmed 2 yellow squash, ends removed and sliced 1 medium pepper, cut in strips 1 small red onion, chopped
Sesame vinaigrette: 1/4 cup soy sauce 1/4 cup red wine vinegar 1 tbsp. sesame seeds 3 tbsp. olive oil 2 tbsp. vegetable oil 1 tbsp. minced garlic
Cut chicken breasts into strips and place in hot skillet with 3 tbsp. olive oil. Cook until no longer pink, approximately 7 to 8 minutes. While waiting for chicken to finish, cook tortellini according to package directions and drain. When chicken is done, remove to a bowl. In skillet, add a tablespoon of olive oil, peas, squash, peppers, and onions. Saute vegetables for 3 to 7 minutes until tender crisp. Add sauteed vegetables and tortellini to chicken in bowl. Refrigerate to chill. In smaller bowl, combine ingredients for sesame vinaigrette and whisk together. Before serving, pour vinaigrette over chicken and tortellini in bowl, gently toss and enjoy!
