Southwestern Salsa2 cups seeded, diced red tomatoes 1 cup seeded, diced yellow tomatoes 1 small red bell pepper, diced 1 small yellow bell pepper, diced 2 small shallots, diced 1 small red onion, diced 3 jalapeno peppers, diced 1 cayenne pepper, diced 3 Tbsp. lime juice 3 Tbsp. white wine vinegar 2 Tbsp. fresh cilantro, chopped In a large mixing bowl, combine all ingredients thoroughly. Chill for one hour before serving. Makes 5 cups. This salsa is excellent served with warm, crisp tortilla chips, or as a side for grilled pork or chicken. Took second place in a salsa contest.
